Homemade Fromage de Tete. This is such a favourite of mine and one of the most delicious terrines imaginable. A real classic of the charcuterie. Complex mixes of herbs and spices, married with slow cooked cheeks, white wine gratin, confit shallots. It’s a far cry from a rustic English brawn.
